Ingredients
- 250g raw sidr honey (or raw manuka honey if unavailable, must be unpasteurised for maximum benefit)
- 3 tablespoons whole black seeds (Nigella sativa, about 30g, sometimes called kalonji)
- 2 teaspoons ground cinnamon, preferably Ceylon cinnamon for delicate sweetness
- 1½ teaspoons ground ginger (or 2 teaspoons freshly grated ginger root for more intense warmth)
- Kitchen equipment:
- Clean 350ml glass jar with tight-fitting lid, sterilised and completely dry
- Small bowl for mixing spices
- Wooden or silicone spoon for stirring (metal can react with honey)
Directions
Step 1
Prepare your workspace by ensuring your glass jar is completely clean and bone dry, as any moisture will cause the honey to ferment over time. Gather all your ingredients and have them measured and ready, because once you start mixing, you want to work efficiently to maintain the honey's smooth consistency. This preparation step is crucial for creating a blend that stores beautifully and maintains its therapeutic properties for months.
Step 2
Toast the black seeds in a small dry pan over medium heat for 1 to 2 minutes, shaking the pan frequently until they become fragrant and you hear them start to pop gently. Don't walk away during this step, as black seeds can burn quickly and turn bitter. This toasting process is where the magic happens, releasing the seeds' essential oils and creating a deeper, nuttier flavour that transforms the entire blend. Remove from heat immediately and let them cool completely for 5 minutes.
Step 3
Combine the ground cinnamon and ground ginger in your small bowl, stirring them together thoroughly so the spices are evenly distributed. This pre-mixing ensures you won't get pockets of intense spice in your honey blend. Take a moment to smell the mixture, you should notice the warm, sweet cinnamon mingling with the sharp, zingy ginger creating an incredibly inviting aroma that promises the healing benefits to come.
Step 4
Transfer your raw sidr honey into a larger mixing bowl if it's too thick to work with directly in the jar. Sidr honey is naturally quite thick and luxurious, so don't be shy about warming the jar slightly in your hands or in a bowl of warm (not hot) water for 2 to 3 minutes to make it more pourable. Never heat honey above 40°C as this destroys its beneficial enzymes and therapeutic properties, so gentle warming is key here.
Step 5
Add the cooled toasted black seeds to the honey and stir gently but thoroughly using your wooden spoon, working in smooth circular motions for about 1 minute. You'll notice the seeds want to float initially, so keep stirring until they're evenly suspended throughout the honey. The honey will start to look beautifully speckled with the dark seeds creating an attractive contrast against the golden colour.
Step 6
Sprinkle in your pre-mixed cinnamon and ginger, then stir continuously for 2 to 3 minutes until the spices are completely incorporated and you can't see any dry patches or streaks. The honey will become slightly darker and take on a gorgeous warm amber tone. You might feel a bit of resistance as the powdered spices thicken the honey slightly, but keep working it, the final texture should be smooth and luxurious with all the ingredients beautifully married together.
Step 7
Transfer the spiced honey blend carefully into your sterilised glass jar using a clean spoon, taking your time to avoid air bubbles. Tap the jar gently on your work surface a few times to help any trapped air rise to the surface. Fill the jar leaving about 1cm of space at the top for expansion. This headspace is important because honey can expand slightly over time, and you want to ensure a proper seal.
Step 8
Seal the jar tightly and give it a final gentle shake or roll between your hands to ensure everything is perfectly combined. Label your jar with the date and contents, then store in a cool, dark cupboard away from direct sunlight where it will keep beautifully for up to 6 months. Take one teaspoon daily on an empty stomach, or stir into warm (not boiling) milk, water, or drizzle over porridge. If the honey crystallises over time, simply place the jar in warm water to return it to its smooth, flowing consistency.
