
Aromatic Pumpkin and Chicken One-Pot Recipe
Tender chicken pieces nestle amongst golden pumpkin chunks in a warmly spiced, olive oil-infused broth that's both nourishing and deeply satisfying. This one-pot wonder transforms simple ingredients into something truly special, with garlic and onions creating an aromatic base that fills your kitchen with incredible fragrance.
Ingredients
- For the base:
- 800g chicken thighs, cut into 4cm pieces
- 600g pumpkin, peeled and cut into 3cm chunks
- 3 medium onions, finely sliced
- 6 large garlic cloves, finely minced
- 60ml extra virgin olive oil
- 500ml chicken stock, halal certified
- 2 teaspoons sea salt
- 1 teaspoon freshly ground black pepper
- For the aromatics:
- 2 bay leaves
- 1 cinnamon stick
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- For garnish:
- Fresh coriander leaves
- Extra virgin olive oil for drizzling
Directions
Step 1
Heat your olive oil in a large, heavy-bottomed pot over medium heat until shimmering. Add the sliced onions and a pinch of salt, cooking gently for 8-10 minutes until they turn soft and translucent. Don't rush this step – it builds your flavour foundation.
Step 2
Add the minced garlic to the softened onions and cook for 2-3 minutes until fragrant and golden. Keep stirring to prevent the garlic from burning – you want it aromatic but not bitter.
Step 3
Increase the heat to medium-high and add the chicken pieces. Cook for 5-6 minutes, turning occasionally, until they're golden brown on all sides. Don't overcrowd the pan; work in batches if needed for proper browning.
Step 4
Stir in all the aromatic spices – cumin, coriander, bay leaves, and cinnamon stick. Cook for 1-2 minutes until the spices become fragrant and coat the chicken evenly. This is where the magic happens!
Step 5
Add the pumpkin chunks and stir gently to combine. Cook for 3-4 minutes, allowing the pumpkin to pick up all those lovely flavours. You'll notice it starting to get a slight golden colour on the edges.
Step 6
Pour in the chicken stock, scraping any browned bits from the bottom of the pot – that's pure flavour! Bring to a gentle simmer, then reduce heat to low, cover, and cook for 25-30 minutes.
Step 7
Check the pumpkin's tenderness with a fork – it should be soft but still hold its shape. The chicken should be completely cooked through and tender. If needed, cook for an additional 5-10 minutes.
Step 8
Season to taste with salt and pepper. Remove the bay leaves and cinnamon stick. Let rest for 5 minutes before serving – this allows the flavours to settle and the sauce to thicken slightly.

The Messenger of Allah ﷺ was staying with Abu Ayyub. When he ate some food, he would send what was left to him. So one day he sent him some food but the Prophet ﷺ did not eat from it. So Abu Ayyub went to the Prophet ﷺ and mentioned that to him. The Prophet ﷺ said: 'It contained garlic.' So he said: 'O Messenger of Allah! Is it unlawful?' He said: 'No, I dislike it because of its odour.'

Season your food with olive oil and anoint yourselves with it, for it comes from a blessed tree.
