      Ingredients

      • For the honey garlic glaze:
      • 4 large cloves garlic, peeled and left whole
      • 2 tablespoons extra virgin olive oil
      • 3 tablespoons raw honey, at room temperature
      • 1 tablespoon apple cider vinegar
      • Pinch of sea salt flakes
      • For the toast:
      • 4 thick slices good quality bread, about 2cm thick (sourdough or white farmhouse work beautifully)
      • 40g butter, at room temperature
      • 120ml whole milk, warmed to body temperature
      • 2 Medjool dates, pitted and finely chopped
      • Optional garnish:
      • Extra honey for drizzling
      • Fresh thyme leaves

      Directions

      1. Step 1

        Start by making the honey garlic glaze, which is absolutely crucial for building those deep, caramelised flavours. Heat 2 tablespoons of olive oil in a small, heavy-bottomed pan over medium-low heat, then add your whole garlic cloves. Let them cook gently for 8-10 minutes, turning occasionally with a wooden spoon, until they're golden brown and completely soft when pressed with a fork. The garlic should smell sweet and nutty rather than sharp, this is where the magic happens. Don't rush this step, as slowly roasted garlic becomes beautifully mellow and sweet, transforming the entire dish.

      2. Step 2

        Once your garlic is perfectly roasted and golden, use the back of a fork to mash it directly in the pan until it forms a rough paste. Add the honey, apple cider vinegar, and a good pinch of sea salt flakes, then stir everything together over very low heat for 1-2 minutes until the mixture becomes glossy and unified.       One-third should be for food, one-third for drink, and one-third should be left empty for air.

      Eat from what is nearest to you on the plate, and do not reach across for food that is distant.
      Take small morsels of food, and chew your food well.
      Do not blow on hot food or drinks; allow them to cool naturally.
      Do not eat or drink from gold or silver utensils.
