Ingredients
- For the smoothie base:
- 1 medium raw beetroot, about 150g - peeled and roughly chopped into 2cm chunks
- 3 dried figs, preferably Medjool for intense sweetness - stems removed and roughly chopped
- 1 tablespoon raw honey, plus extra for drizzling
- 2cm piece fresh ginger, peeled and roughly chopped (about 1 teaspoon grated)
- ¼ teaspoon black seeds (nigella sativa), plus a pinch extra for garnish
- 180ml cold water, plus extra if needed for consistency
- 3-4 ice cubes (optional, for a chilled smoothie)
- For serving:
- 1 fresh fig quarter, for garnish
- Small drizzle of honey
- Pinch of black seeds
Directions
Step 1
Begin by preparing your beetroot, as this is crucial for achieving a smooth, silky texture. Peel the raw beetroot carefully (wearing gloves prevents staining your hands) and chop it into rough 2cm chunks so your blender can process it easily. Raw beetroot gives this smoothie its stunning ruby colour and earthy sweetness, whilst also providing maximum nutritional benefit. If you're new to using raw beetroot, don't worry, the figs and honey will balance its earthiness beautifully.
Step 2
Heat a small saucepan over low heat and add 180ml of water. Warm the water gently for 2-3 minutes until it's just steaming but not boiling, reaching about 60-70°C. This gentle warmth will help release the flavours from the ginger and black seeds whilst softening the dried figs slightly, making them easier to blend into a velvety smooth consistency. Don't let the water boil, as we want to preserve the beneficial properties of the honey we'll add later.
Step 3
Add your chopped dried figs to the warm water and let them steep for 3-4 minutes, allowing them to plump up and soften beautifully. The figs will absorb some water and become wonderfully tender, which means your blender won't have to work as hard. You'll notice the water taking on a lovely amber colour as the figs release their natural sugars. This is where the magic happens, creating a naturally sweet base for your smoothie.
Step 4
Transfer the warm fig water mixture (including the softened figs) into your blender, then add the chopped raw beetroot, roughly chopped ginger, and black seeds. The combination might look a bit rustic at this stage, but trust the process. Add your tablespoon of honey now, as the residual warmth from the water will help it incorporate smoothly without destroying its beneficial enzymes. Don't be shy with checking your honey is raw and unprocessed for maximum prophetic benefit.
Step 5
Blend on high speed for 60-90 seconds until completely smooth and silky. You're looking for a velvety, pourable consistency with no visible chunks of beetroot or fig remaining. The colour should be a stunning deep magenta with tiny black seed specks distributed throughout. If the mixture seems too thick, add cold water 1 tablespoon at a time and blend again briefly. The ginger should be completely pulverised, giving you gentle warmth rather than harsh chunks.
Step 6
Taste your smoothie and adjust the flavours to your preference. If you'd like more sweetness, add another teaspoon of honey and blend for 10 seconds. If the ginger warmth is too intense, add a splash more water to mellow it. Remember, the flavours will develop slightly as the smoothie sits, so the ginger warmth may become more pronounced. This is your chance to make it absolutely perfect for your palate.
Step 7
If you prefer a chilled smoothie, add 3-4 ice cubes to the blender and pulse for 15-20 seconds until the ice is crushed and incorporated. This creates a refreshing, cold drink whilst maintaining that silky texture. Alternatively, if you enjoy the gentle warmth from the steeped figs and ginger, pour it as is for a more soothing, room temperature experience that's lovely for cooler mornings.
Step 8
Pour your beautiful ruby smoothie into a clear glass to showcase that gorgeous colour. Drizzle a small amount of honey over the top in a decorative swirl, then garnish with a fresh fig quarter perched on the rim and a light sprinkle of black seeds. Serve immediately whilst the flavours are vibrant and bright, and enjoy this nourishing elixir knowing you're honouring prophetic foods with every sip. The earthiness of beetroot, sweetness of figs, warmth of ginger, and blessing of black seeds create something truly special.
